Well, I've never really bought into the organic hype before. Organic to me = more expensive at Safeway. But thanks to our friends the Conti-Browns, we made organic omelets this morning filled with fennel, spinach, mushrooms, and swiss cheese. There's some local farms that actually deliver fresh vegetables and fruit on campus. We missed out on the strawberries last week, but we did get some fun carrots, radishes, fennel, leeks, spinach, lettuce, mushrooms, parsnips, mustard greens, that grassy looking stuff, and some other kind of big green leaf. So we get all kinds of fresh, healthy food delivered for only $10 a week! It's amazing! I just have to figure out what to do with it now... Nikki let me borrow her vegetarian cookbook, and so far we've made zucchini soup, and fennel omelets. Let me know if you have any good parsnip recipes, etc. Thanks Kate for the potato leek soup recipe on your blog!

I'm Organic

I made something with parsnips once but can't remember what. They're not that great of a vegetable. Cool you get all that for $10, though.
I'm an organic sucker, but I try and be choosy. I'll do organic vegetables and dairy but tend to skip the organic mac and cheese. Really.
The baby video isn't working... just FYI. It may just be my incompetence though. Congrats on going organic. I don't like enough fruits and vegetables to adopt that lifestyle. I'm sure the baby will appreciate all the healthy food you'll be eating though. Can't wait to hear what the baby is!
Yeah, I really can't claim to completely understand what makes something organic or not. But I love trying new foods so this will be a fun challenge to figure out what to do with all my new veggies.
I think you need Quicktime to see the belly movie...I don't have it here at work either. We'll have to change that.

You gotta love a girl that posts pics of her organic veggies! I used to buy all organic for a while, but then I sort of lost steam; but I still like the idea of pesticide-free. Therefore I suppport your decision 100%.
